SPAT
Baby oysters, called "Spat", are grown at a nursery before they are brought to the farm where they are placed in bags that float on top of the water column. because the storks are busy, our spat is delivered to us by brown pelicans.
FLO-RIDAS
Our spat continues to grow as they ride the waves inside of the bags. The shells are hand tumbled and sorted according to size as they grow. this process can take between 6 months to 1.5 years.
SALTY BIRDS
Once a shell reaches 3 inches in length it is considered a full grown "Salty Bird" and ready for harvest. Our oysters are Clean, salty, and always in season.
